Components and process Dough preparation: A heavy-duty mixer blends ingredients to form the dough, which is then kneaded for proper gluten development. Dough shaping: A divider cuts the dough into portions, and a rounder shapes it into uniform balls or pieces for the first bake. First baking: The dough is baked in a tunnel or deck oven to form loaves or buns. Cooling: The baked loaves are cooled on a conveyor belt to room temperature.
