Bananas grow in hot climates, so they are unused to the cold. If they're kept at a cold temperature, the enzymes that enable them to ripen are inhibited. And as those enzymes become inactive, other enzymes operate more efficiently. Some cause cell damage, while others (browning enzymes) cause the skin to blacken.“Consuming bananas at the ideal ripeness provides the best balance of starch and sweetness, as well as maximum micronutrients such as potassium, vitamin B6, and antioxidants,” says Lane. Potassium is a key nutrient for regulating blood pressure, which helps reduce the risk of heart attack and stroke.Most commercial cultivars of bananas require exposure to 100-150 ppm ethylene 24-48 hours at 15-20°C (59-68°F) and 90-95% relative humidity to induce uniform ripening.
