What is a chocolate (or chocolate warmer)? A chocolate / warmer is a large pan that sits in a hot water bath. The water temperature is controlled by a thermostat, as the water heats up it heats the metal pan, which thereby melts or warms the chocolate in the pan (very much like a purpose of a tempering machine is to thoroughly melt out the crystals in the chocolate, generally 42ºC to 45ºC, prior to decreasing the temperature to the working temperature .The melting point of chocolate falls between 86°F and 90°F. This is significantly lower than the average temperature of the human body, which is 98.6°F so the heat from your hand raises the temperature of the chocolate and causes it to melt
