A convection oven has a fan and exhaust system that circulate hot air around the inside of the oven, making it ideal for multi-rack cooking. Like conventional ovens, convection ovens can be gas or electric and come in different models with various features.As a matter of fact, convection ovens are almost exactly the same as regular ovens, just with an extra feature. A convection oven contains an additional fan and exhaust system that blows the heated air through the entire space evenly while your food is cooking.The convection method speeds baking, roasting and broiling. Moreover, your oven is suitable for multilevel baking because of a circular heating element surrounding the fan. The fan distributes the heat from the rear, allowing even browning of large quantities of food being baked at the same time.How does convection work? Convection works by areas of a liquid or gas heating or cooling greater than their surroundings, causing differences in temperature. These temperature differences then cause the areas to move as the hotter, less dense areas rise, and the cooler, more dense areas sink.
