Curd or Dahi is obtained from pasteurized or boiled milk by fermenting it. It is consumed by large population throughout the country.Two types of curd are consumed viz. a sweet/mildly sour variety with a pleasant flavor and a sour variety with a sharp acidic flavor.Lassi or buttermilk is the by-product obtained when churning curdled whole milk with crude indigenous devices for the production of indigenous butter or makkhan.
