It is a frozen dairy dessert similar to American ice cream in appearance but made without the addition of air. This makes it richer, denser and creamier in texture (similar to Italian gelato).It comes in different flavors. The more customary ones are cream (malai), rose, mango, cardamom (elaichi), saffron (kesar or zafran), and pistachio.
