Seed potatoes are best stored in cold store maintained at 2-4°C while other types at 4-10°C. However, controlling carbon dioxide is also important as much as cold room temperature and humidity control in cold storage. Increase in the level of carbon dioxide should be controlled and kept within certain limits.The reason behind this is temperature of Potato has to be brought down from Ambient to 2 °C within 15 days to increase the shelf life of the Potato After the loading, the Refrigeration capacity is comparatively low. The temperature only needs to be maintained at 2 °C or 10 °C depending on the type of potato.Although you shouldn't put potatoes in the fridge, potatoes will still keep the longest when stored in a cool, dark place specifically somewhere that has a cold temperature of about 50°F and 90 to 95 percent humidity, like, you know, a temperature- and humidity-controlled root cellar.
