Sodium alginate is a natural, water-soluble polysaccharide derived from brown algae that is used as a stabilizer and thickener in many products: Food and beverage: Used in gummy and gel confections, ice creams, pastries, baked goods, meat products, and restructured foods Cosmetics: Used in lotions, creams, hair products, and toothpastes Pharmaceuticals: Used in gel capsules Hemostatic: Used in drilling muds, water treatment, dental impression preparations, boiler compounds, and cement compositions Drug delivery: Used due to its biocompatible and biodegradable nature Sodium alginate is a linear copolymer of β-D-mannuronic acid (M) and α-L-guluronic acid (G) residues. The ratio of M and G units varies by source, which affects its physicochemical properties. G blocks make the polymer rigid, while M blocks make it flexible.
