The molder receives pieces of dough from the intermediate proofer and shapes them into cylinders ready to be placed in the pans. There are several types of molders, but all have four functions in common: sheeting, curling, rolling, and sealing.Stainless steel dough moulder provides consistent pre-shaping of baguettes. Mostly used by bakers. Dough moulding is the final step of the makeup stage in high-speed production of pan or loaf-type bread. It is a continuous mode operation, always receiving dough pieces from the intermediate proofer and placing them into pans.The term 'dough' came to mean 'money', as it stems from the term 'bread' which came before it. 'Bread' was used to reference money in the earlier days, as both bread and money were seen as everyday essentials in life – without either of these it was impossible to get by.
