These bins provide the same purpose for potatoes that a bread box does for bread- keeping them good for as long as possible.The gases given off by the onions can cause the potatoes to sprout faster. Some people prefer a separate potato bin for this reason. The nice thing about this bin is that the compartments are completely separate. There in no airflow between the two compartments, so it keeps those onion gases away from the potatoes.
