1 The product shall be considered Tomato sauce, when it contains no less than 18 % but less than 25 % of natural total soluble solids. 3.2. 2 The product shall be considered Tomato ketchup, when it contains at least 26 % of natural total soluble solids.Some of the assorted equipment that will be available includes the ultrasonic washer, stainless steel kettles and tanks, dicers, micro-cut machine, pH meters, refractometers, and tools such as buckets, spoons, and ladles.Cut tomatoes into 1/4 or 1/8 sized pieces. Feed the pieces through juicer/ strainer or food mill to remove skins and seeds. Place juice in large pot and bring to boil. Turn down heat and low boil until reduced by half, for thick sauce.
