It gives complete drying and vaporization of moisture of the product.The main purpose of vacuum-drying is to allow the removal of moisture under vacuum and hence at a lower temperature condition and oxygen content (Reis, 2014). Vacuum-drying is therefore suitable for heat- and oxygen-sensitive materials.
