More specifically, roasting is a metallurgical process involving gas–solid reactions at elevated temperatures with the goal of purifying the metal component(s).Start by preheating the oven to 425° F. If you are roasting a large piece of meat, allow it to stand at room temperature for 1 hour and season just before placing in the oven. Allow the outside of the meat to cook at 425° F for about 15 to 20 minutes.
