A bakery mixer is designed to produce bread dough or cake batter by bringing dry and liquid ingredients together to form a mass with optimum rheology and handling properties. For a preset product load, efficient mixers should perform their function under optimal mechanical and energy consumption.Unlike a planetary mixer, a spiral mixer has a rotating bowl which spins while the spiral hook spins and kneads the dough in a more similar motion to hand kneading. This produces less friction and less heat on the dough, ensuring proper temperature for fermentation and speeding up dough development 20%-30%.The machine works on the principle that the gearbox reduces the motor speed to suit relatively high torque required during agitation. The dough is then manually removed from the mixing bowl. A pedal powered. dough mixer prototype operated manually by peddling using human tabor.A stand mixer on its own is an essential tool for mixing, mashing, whipping and other in-bowl functions that help with baking, large batch meal prep and beyond.
