The spiral mixer is an industrial equipment conceived to prepare bread dough or other sort of product, replacing manual labour through a mechanical system that allows to produce, continuously, large quantities of dough.Used primarily for mixing bread dough's and pizza crusts. Its main feature is the rotational movement of the pot together with the spiral hook, which makes only on part of the dough to work while maintaining low friction heat, and providing a more homogeneous mixture.Unlike a planetary mixer, a spiral mixer has a rotating bowl which spins while the spiral hook spins and kneads the dough in a more similar motion to hand kneading.Planetary mixers have a single motor and a stationary bowl. They come in smaller countertop versions and larger floor-standing models and are among the most popular mixers for commercial kitchens. As the name implies, planetary mixers feature an agitator that moves around the bowl like a planet.
