A steamer allows you to make steamed idlis and other food items very easily without requiring any oil at all. Idlis are traditionally made in a special steamer, called idli stand or idli mold. Idli steamers are made of stainless steel hence are low-maintenance.Use 'Silicon Muffin Moulds' or simple 'Katoris'. You can also steam the idli batter in a 'Thali' the way dhokalas are made and cut.* The secret ingredient is soaked fenugreek seeds or methi dana that helps get the fluffiness right. It's healthy and also aids in fermentation. But if you use too much of it, the idli would be bitter. And if you want a really white idli, skip the seeds.Add some 2 to 2.5 cups water and heat the water until it comes to a light boil. Keep the idli mould in the steamer or pressure cooker. Steam for 12 to 15 minutes.Why are we using eno in this recipe? As soon as eno is added to the recipe, the citric acid and sodium bi carbonate reacts creating bubbles, which aerates the batter. As we are not fermenting the batter and this is an instant version, you need this for spongy soft texture.Take the idli plate & cover it with damn cheese cloth, pour the laddle of batter in each hole of the plate. When the water in the idly pan comes to boil, place the idly plate and cover it . Cook it for 5-7 mins depends on the size of the idlis.
