Pasteurization, heat-treatment process that destroys pathogenic microorganisms in certain foods and beverages.Most commercially processed juices are heated to about 85°C (185°F) for about 16 seconds to destroy germs, yeasts and moulds. These products are just as nutritious as if they were not heated. They taste good and last much longer than unheated juice.Characterization, pasteurization and storage are essential steps in fruit juice processing. Watermelon, pineapple, and mango juices were pasteurized at 80 ± 2 °C and held at different treatment times.The pasteurization unit is designed for the thermal treatment of soft drinks and juices. The pasteurization process destroys pathogenic microorganisms by heating the product to a moderately high temperature for a brief period.
