Paneer manufacture involves the coagulation of milk proteins to form curd. During this process large clumps of proteins are formed in which fat and other colloidal and dissolved solids get entrapped. The coagulation of milk occurs when pH of milk reaches 4.6 which is the isoelectric point of its major protein, casein. Paneer (pronounced , also known as (pronounced []) or Indian cottage cheese, is a fresh acid-set cheese common in the Indian subcontinent (Bangladesh, Bhutan, India, Maldives, Nepal, Pakistan and Sri Lanka) made from cow or buffalo milk. Paneer or cheese is the most relished dairy product. It is in high demand in India and all over the world. Manufacturing of paneer involves curdling of the milk and straining it. Paneer equipment at various dairy plants uses various techniques to develop it.
