An oven comprising one or more horizontal circular tables on a vertical axis that turns so that work can be introduced at one radial position and removed at another after heat and rotation have completed the process.A rack oven is a batch vertical oven into which racks full of sheet pans can be wheeled for baking. This unit can hold 8 to 20 sheet pans per baking cycle.Rack ovens allow you to load and unload the entire chamber at once with may pans as compared to other ovens where you need to load and unload one pan at a time. Which means that all the products that are loaded in the oven gets evenly baked and takes same amount of time.Use a cooling rack, which diffuses the heat and helps prevent scorching by keeping delicate foods off the bottom of the pan. When roasting juicy meats like steak or chicken thighs, put beans or vegetables under the cooling rack to soak up the drippings while they cook
