Product Description
The process includes heating the milk, cooling, coagulation with an acid, and incubation of the coagulated milk curds. To prepare the cheeses, the curd can also be separated from the whey and subjected to salting, molding and/or pressing.Curd is obtained by coagulating milk in a sequential process called curdling. It can be a final dairy product or the first stage in cheesemaking. The coagulation can be caused by adding rennet, a culture, or any edible acidic substance such as lemon juice or vinegar, and then allowing it to coagulate.Milk processing allows the preservation of milk for days, weeks or months and helps to reduce food-borne illness. The usable life of milk can be extended for several days through techniques such as cooling (which is the factor most likely to influence the quality of raw milk) or fermentation.
