It's made by juicing the flesh of the mango, then heating the juice to evaporate a proportion of the fruit's water content. This leaves a condensed, concentrated mixture around six times stronger than a standard juice, which can later be brought back to single-state strength by re-adding the water during processing.Juice labelled 'from concentrate' goes through a process where the juice is extracted from the fruit and then gets filtered and dehydrated to remove some of the water content. It is also pasteurised - this process involves gently heating the liquid to kill any potential pathogens found in the fruit.The mango juice production process covers sorting, peeling and destoning, softening, pulping, homogenization, degassing, sterilization, filling and packing, cooling.
