Steam-jacketed kettles (Figures 1 and 2) are often used to rapidly and uniformly heat food and agricultural products to processing temperatures. Steam is injected into a thin jacket that surrounds the bowl of the kettle (Figure 3).However, a key advantage of steam-jacketed kettles is that most models cook with steam under pressure. This allows the kettle to operate at temperatures up to approximately 300 degrees Fahrenheit -- considerably higher than the 212 degrees Fahrenheit of pressureless models or non-jacketed kettles.In chemical engineering, a steam jacketed vessel is a container that is designed for controlling temperature of its contents, by way of the use of a cooling or heating "jacket" round the vessel via which a cooling or heating fluid is circulated.Steam-jacketed kettles utilize pressurized steam in the kettle jacket, from where the steam energy transfers heat via conduction to the food product inside. The steam to the kettle's jacket can be directly from the steam supply or by a steam generator integrated into the jacket.
