Marmalade is a fruit preserve made from the juice and peel of citrus fruits boiled with sugar and water. The well-known version is made from bitter orange. It is also made from lemons, limes, grapefruits, mandarins, sweet oranges, bergamots, and other citrus fruits, or a combination.Jams are made from one type of fruit or vegetable, whereas marmalade must use a citrus fruit in its preparation. Jams use the entire fruit by crushing, pureeing and cooking, whereas marmalades consist of the citrus peel, pulp and the juice (not the whole fruit).In general, jam is produced by taking mashed or chopped fruit or vegetable pulp and boiling it with sugar and water. The proportion of sugar and fruit varies according to the type of fruit and its ripeness, but a rough starting point is equal weights of each.
