In either case, the milk is homogenized and then the water is removed with gentle heat.Evaporated milk is manufactured by a process of evaporation, concentration, homogenization, and sterilization of whole milk.Both evaporated milk and sweetened condensed milk come in cans. They are sold in most grocery stores and can be found in the baking aisle. The two milk products are shelf-stable and do not require refrigeration before opening.
