The driers are used in A tray dryer is a convectional drying equipment with enclosed insulated chambers and trays placed on top of each other in a trolley.Tray Dryers are ideally suitable for drying chilies, spices, papads, potato chips, onions, fish, garlic, grapes, cashew nuts, confectionery, macaroni, wood etc. It is also for used for drying pharmaceuticals, chemicals, powders, granules, plastic granules etc.Tray drying refers to dehydrating small pieces of produce by exposing them to a source of hot dry air or to the sun until dry enough to store at ambient temperature with minimal spoilage. Dried foods are lighter and store in a smaller space than canned foods and do not require a constant power supply like frozen foods.Cabinet/tray dryers are used for batch drying of solid foods at small to moderate scale (say, 2000 to 20 000 kg per day). They are inexpensive and simple to construct. Cabinet dryers consist of a closed compartment in which trays containing the food to be dried are placed( Fig. 32.1).Dryers may be classified as direct dryers, indirect dryers, and radiant dryers. The types of radiant dryers are microwave dryers and infrared dryers. An industrial dryer can either operate in a batch or continuous mode. The types of batch dryers are tray dryers, vacuum dryers, pan dryers, freeze dryers, and bin dryers.
