Batch freezers freeze the ice cream mix in batches, while continuous freezers freeze the ice cream mix constantly.Ice cream mixes are formulated from either whole milk, skim milk, cream or in some cases water, with a number of added ingredients.Ice-cream makers are household appliances that turn a basic liquid base or custard – a mixture of cream, milk, egg yolks and sugar, plus any flavourings – into frozen ice cream through a process of chilling and churning. A rotating paddle keeps the liquid moving and lets in air, while also scraping down the sides.Ice cream is a heterogeneous mixture because solid ice is dispersed into the liquid medium. In a heterogeneous mixture, the components are mostly identifiable because these usually occur in two or more physical states.
