Jacketed steam kettle means a pressure vessel with inner and outer walls that is subject to steam pressure and is used to boil or heat liquids or to cook food.Steam-jacketed kettles (Figures 1 and 2) are often used to rapidly and uniformly heat food and agricultural products to processing temperatures. Steam is injected into a thin jacket that surrounds the bowl of the kettle (Figure 3).Steam-jacketed kettles utilize steam energy to transfer heat via conduction to the food product inside. The energy source — electric, gas and direct steam — that operates the unit helps define the categories of kettles available to operators.In chemical engineering, a steam jacketed vessel is a container that is designed for controlling temperature of its contents, by way of the use of a cooling or heating "jacket" round the vessel via which a cooling or heating fluid is circulated.
