The spiral mixer is an industrial equipment conceived to prepare bread dough or other sort of product, replacing manual labour through a mechanical system that allows to produce, continuously, large quantities of dough.Unlike a planetary mixer, a spiral mixer has a rotating bowl which spins while the spiral hook spins and kneads the dough in a more similar motion to hand kneading. This produces less friction and less heat on the dough, ensuring proper temperature for fermentation and speeding up dough development 20%-30%.In general, a planetary mixer is ideal when versatility of use and robust kneading are desired. A spiral mixer, on the other hand, is the best option when mixing artisan and airier dough. Below is a closer look at both types of mixers.
